The COLDZYME project aims to confront the technological problems that arise during the use of amylolytic enzymes for the production of prehydrolyzed starchy baby foods. More specifically, "tailor-made" mixtures of psychrophilic amylases will be developed for the pre-hydrolysis of the starch in the flours used for the production of baby foods by YIOTIS S.A. Enzymes’ residual action will be prevented during the production process and the reconstitution of the final product in relation to its desirable rheological and organoleptic characteristics.
