Why has my chocolate gone a bit white? Does it affect the taste?

Chocolate goes white because, at some stage during storage, or handling it was exposed to temperatures above 25°C. This is a characteristic of chocolate products in that, during changes in temperature, the fats rise to the surface which gives them a greyish-white appearance. Although this may look unsightly, it does not affect the quality of the product and when it melts it returns to its original state.
